How to run a focused elimination

  2. Weeks 2–3: Build meals around fresh, low-histamine alternatives: fresh meat and poultry eaten the day of cooking, fresh fish within 24 hours, fresh vegetables and fruit (except the high-histamine ones on your list), rice, potatoes and herbal tea.
  3. Weeks 3–6: Hold the elimination steady and keep the diary honest. Most people see a pattern emerge on paper between weeks 2 and 4 — note portion sizes and stressful days too, because histamine tolerance is dose-dependent and varies.

Will the test tell me if I have low DAO enzyme?

Is histamine intolerance the same as a food allergy?

No. An allergy is an immune response (involving IgE antibodies) that can cause anaphylaxis. Histamine intolerance is a digestive issue—your body struggles to break down histamine from food, and symptoms are dose-dependent. Standard allergy tests will be negative, yet you can still react to high-histamine foods. This is why it so often gets missed.

Why do some days feel worse than others, even with the same food?

Histamine tolerance is variable. Stress, poor sleep, infections, hormonal cycles, and other medications can lower your DAO enzyme activity, making you more sensitive on certain days.
